Hello! new to cosplay and ACP

Hello!
New to cosplay and ACP. My fiance loves cosplay and all things anime, I'd like to at least get my toes wet and figure all this out so I can support him in his hobbies. So I'm not sure wear to start. He took me to my first convention not long ago, Tokyo in Tulsa. I dressed up as Death of the Endless from Neil Gaiman's Sandman series.
No one knew who I was lol. Except one girl who worked at a comic book store. =)
Anyway, I'd like to look into couples cosplay, but I feel kind of like an interloper dressing up and not knowing any of the backstory to the characters.
So where is a good place to start? I was kind of thinking of doing Belle and the Beast? But like...our own versions of it? do people do that? I found this picture by misakochan..
